I add crispy, fried prosciutto for its salt and hammy flavor, and because dinner is just usually more, well, dinnerlike for my husband if it contains a little meat. But once you get past that, what's particularly noteworthy is that each of Snyder's recipe yields two good-sized portions that are easily prepped and cooked all within an hour. And for anyone who's cooking for two--whether it's for a friend, partner, spouse--these recipes are especially nice to have on hand when 1 you have had a long day at work but still need to get something yummy on the table; and 2 when you really don't want leftovers. Both resonate with me, but especially the latter--because let's face it: Between the two of us, I am more likely to bring my lunch, and rarely do leftovers taste better, especially when eaten in the office. In addition, Snyder gets huge bonus points for the "extra-hungry" and wine pairing tips to help make the meal complete.
